Chef Louis Gervais Showcases New Holiday Catering Menu With Media Dinner

Earlier this month Chef Louis Gervais and the team had an opportunity to host a select group of local media to showcase the new holiday catering menu in advance of the festive season.

We spent time setting up our cozy cafe, transforming it for the evenings family-style holiday feast.  With the help of our friends at Lonsdale Event Rentals, we transformed the room into an elegant and welcoming space complete with white tablecloth, polished silverware and beautiful place settings.

Guests arrived ready to dine on a curated selection of new dishes from our new fall/winter menu – but not before we helped them to a glass of BC wine and craft beer.

To get things started, Chef Louis had prepared a trio of tantalizing appetizers for the crowd of about twenty media guests.  We started off with our peanut-crusted schezuan chicken strips wrapped in a delicate ribbon of cucumber wit gochujang glaze.   This was followed by beef carpaccio served in a pecorino nest with dijon aioli and fresh capers.  We also served our new scallop ceviche alongside endive leaves and a lime caviar.

After plenty of time to mix and mingle guests were called to take a seat as the family style service began.

Chef Louis and his team had prepared a feast, here’s what he dished out:

Nova Scotia Lobster Grilled Cheese (served on on Sourdough)

Battered Curried Cauliflower (with a scallion mint yoghurt dip)

Spanish Cod Escabeche (Mediterranean capsicum vera pasilla pepper & olive ragout, served on truffled black linguini)

And finally, a huge hit with all diners, the Saffron Brioche Crusted Lamb Chops (served within a beautifully prepared banana squash shell with vert jus bourbon broth). 

As if that wasn’t enough, the culinary team made sure to outdo themselves for dessert…. A white chocolate croissant pudding served with a drizzle of house made caramel sauce and whipped cream.
